Hello Friends!

Welcome to Bitchin’ Beet. My name is Mel and I’m a mom, runner and web designer. Bitchin’ Beet is the relaunch of my former food blog, Bitchin’ Camero with a greater emphasis on Food as Fuel.

I started this blog in 2018 to share recipes that are delicious, but also filling and nutritious for all kinds of active folks. I’ve been a runner on and off for the past 10 years (with some breaks for babies) and I’ve learned a lot about nutrition.

I ran my first half marathon without fuel. Of course, I was absolutely dying at the end of it. After my first daughter was born, I went all-in on the Paleo craze and my running was brutal. In the 3 years between my kids, I ran the slowest I’ve ever run in my life. I decided Paleo doesn’t work for me, doesn’t fuel my active lifestyle. It just wasn’t sustainable.

So, I took my love for cooking and began experimenting with food as fuel. Lo and behold, we are now sustained by Grain Salads, Power Bowls, and so many sweet potatoes. I’ve shaved 12 minutes off my half marathon time and 10 minutes off my 10k!

In each recipe, I’ll let you know why I paired the ingredients a certain way, and how great food can improve your health, energy, and maybe even your speed.

I live in the Miami area with my husband of 11 years (Tom) and my two little girls (Liv and Ellie). We have a big case of wanderlust and travel at least once a month. If you have travel tips or suggestions on where to go, definitely let me know!
